The Correctional Food Services program employs full time staff who operate a "cook chill" meal delivery system. Using this system, meals are cooked days in advance and immediately quick-chilled and kept below 40° F until reheated for service. Correctional Food Services delivers roughly 55,500 meals per month to the juvenile detention facility and the jail.
During an average month, for example, the kitchen will use:
- 22,000 dinner rolls
- 2500 pounds of hamburger
- 2500 gallons of milk
- 2000 heads of lettuce
